Sauce up your life with Olive Oil from Spain, Part I

Every cuisine in the world has some form of emulsion in its culinary repertoire, mainly in the form of sauces. These blends of ingredients of different textures and flavours enhance and bring personality to meat, fish and salads.  They can be served either hot or cold, depending on how they are prepared and the dish they are intended to accompany.

Emulsions are a mixture of two incompatible liquids such as oil and water. They are ‘emulsified’ by thorough whisking, perhaps with the help of an electric mixer, until the drops of liquid lose their surface tension and blend together.

Sauces and emulsions bring colour and flavour to all our recipes, and when they are made with Olive Oils from Spain, they have an unmistakable aroma and smoothness. Indeed, olive oil is a feature of nearly every sauce and in many cases, it’s an essential ingredient. Let’s not forget the tremendous health benefits of olive oil, which makes it that much more important to include it in every dish. All in all, it is a real ally that should always be one of your cupboard staples.
