Huevos rancheros are one of the most popular breakfasts in the world, so much so, that in many places people have them at any time of the day. Discover how to make huevos rancheros, a tasty Mexican dish very easy to prepare.

Before preparing huevos rancheros, be aware that there are many variations, and here we offer you our favorite, which has avocado and refried black beans, easy to make at home or also available at any food store. However, in many places they also add minced meat or do without beans or avocado, for example; the truth is that huevos rancheros is such a versatile meal that everyone can have their take on it.

How to prepare huevos rancheros:

  1. Cut the tomato, the chives and the bell pepper, all in small cubes.
  2. In a frying pan, add a tablespoon of Spanish EVOO and once hot, add the tomato, chives and peppers. Sauté until the ingredients soften and the tomato thickens.
  3. Fry the eggs in a separate frying pan with Spanish olive oil (if you prefer them grilled, brush the pan with a little olive oil from Spain and the eggs will be a little lighter). After using it, don't throw the used olive oil away. In this other article we show you how to reuse olive oil.


  1. Meanwhile, open the refried black beans can and heat them up at a slow heat in a pot.
  2. Heat up the tortillas in a clean pan, no more than thirty seconds each side. Don't get distracted, they burn very easily!

Plating the huevos rancheros:

  1. Place the hot tortilla on the plate and add some of the tomato and pepper sauce. If you want to add black beans, you can also do it at this point.
  2. Place the fried eggs on top of the tomato.
  3. Add the diced avocado, the chopped coriander, the jalapeños and a dash of lime juice.
