With Autumn comes the cold weather and it is the perfect time to prepare sausage balls, a comforting snack, very easy to make and loved by adults and children alike. With this recipe for sausage balls, you will be the star at family gatherings and even Halloween parties. Let's go!

How to make sausage balls:

  1. Preheat the oven at 350ºF. Take the oven tray out.
  2. Now, let’s make the baking dough. Mix the flour, the baking powder and the salt in a bowl. Add the Spanish EVOO and whisk everything well until you get a thick and sticky dough. If the mixture looks too dry, just add a bit more Spanish olive oil and mix again.
  3. Chop the half onion in very tiny cubes.
  4. In a big bowl, combine the ground pork sausage meat, the onion and the dough. Shred the Manchego cheese straight into the bowl –do not buy preshredded cheese, it is too dry-. Mix everything very well for a few minutes.
  5. Scoop the mixture with a spoon to make balls the size of a walnut, approximately. Do not make them bigger, because if you do so the meat might not cook well enough.
  6. Put baking paper sheets in the oven tray and place the sausage balls.
  7. Bake in the oven at 350ºF for around 20-25 minutes, until the sausage balls look golden brown.
