Shredded chicken, paprika and avocado sandwich 

A sandwich can be your best friend around meal time. How often do you have no time to sit down and enjoy your meal, because you have to finish whatever is on your to-do list? You eat a piece of fruit or something quick that will stave off your hunger for maybe half an hour. We're sure you know this, but this is not the Mediterranean way, and you should take care of your body like it deserves.

If you are one of those people who is always short on time, and never knows what to eat, this is your recipe: a delicious shredded chicken sandwich.

For many years, shredded meat was the star dish of Chilean households. It consists of pulling apart or shredding meat and seasoning it, in this case with paprika, to give it a tangy, smooth touch thanks to the Extra Virgin Olive Oil from Spain, an important ingredient in all recipes.

Now even when you don't have much time there are no excuses to eat poorly.

Preparation:

  1. Toast the slices of bread in a pan with a little Extra Virgin Olive Oil from Spain or directly in a toaster.
  2. In a bowl, mix the Extra Virgin Olive Oil from Spain, mustard, the juice of half a lemon, the salt and the paprika. Mix until emulsified.
  3. Cut the tomatoes into slices and shred the chicken. Mix the chicken with the sauce. Cut the avocado into slices. Keep in mind that avocados will oxidize and turn brown, so cut them just before assembling the sandwich.
  4. Assemble the sandwich with the mixture of chicken, avocado, and tomato slices.

 Yum!

  • 8 slices of whole wheat sandwich bread
  • 2 shredded chicken breasts (cooked and pulled apart)
  • 1/4 cup Extra Virgin Olive Oil from Spain
  • 1 teaspoon paprika
  • 1 tablespoon classic mustard
  • Salt to taste
  • The juice of half a lemon
  • 2 avocados
  • 2 sliced tomatoes
