What can you preserve? Well, loads of ingredients really, like onions, peppers, green beans, pork tenderloin, fresh tuna and cherry tomatoes, to name but a few.
Follow these simple steps and your favourite food will last for weeks in perfect condition with all its nutritional properties intact.
HOW TO PRESERVE TUNA
Ingredients
- Extra Virgin Olive Oil from Spain
- 1 kilo fresh tuna
- Salt
- Mixed peppercorns
- Water
Boil a pan of water with 3 tablespoons of salt, add in the tuna and turn down to simmer for 10 minutes. There should be enough water to completely cover the fish.
Remove the fish and leave it cool on a rack.
Cut the tuna into chunks with a sharp knife.
Layer the slices in a preserving jar.
A little tip: make sure you sterilise the jars thoroughly to stop any bacteria or fungi developing.
Cover the tuna with Extra Virgin Olive Oil from Spain and add a few peppercorns.
And now you’re ready to enjoy a delicious meal of tuna whenever you fancy. It’s delicious served with onion marmalade or a fresh salad.
HOW TO CONSERVE CHERRY TOMATOES
For this recipe, you’ll need:
- Extra Virgin Olive Oil from Spain
- 1kg cherry tomatoes
- Honey
- Mixed peppercorns
- Fresh thyme
- Fresh rosemary
- 3 garlic cloves
- Salt
- Honey
Wash, dry and halve the tomatoes.
A little tip: a quick way of doing this is to put all the tomatoes on a flat plate, then put another plate over the top. Press down gently on the top plate and pass a large and very sharp knife between the two plates. In a couple of seconds you’ll have a plateful of halved tomatoes!
Preheat the oven to 180ºC. Put the tomatoes on a baking tray covered with waxed paper. Chop the herbs and scatter them over the tomatoes along with the salt, ground pepper, crushed garlic, honey and Extra Virgin Olive Oil from Spain. Roast in the oven for 8-10 minutes.
Leave the tomatoes to cool before filling the jars and covering them with Extra Virgin Olive Oil from Spain. Add a couple of sprigs of fresh herbs and a few peppercorns.
They taste fantastic as a garnish for meat or fish, or to enrich some simple roast potatoes.
