This fried tapa is perfect for meat and cheese lovers. Flamenquin preparation is very easy and you don't need too many ingredients. The traditional recipe only consists of ham and pork. The inclusion of cheese in this recipe has become so popular that this recipe is no longer conceivable without a good Manchego cheese that provides a juicy and tasty interior. 

The olive oil from Spain plays a fundamental role in this recipe and it makes the frying fine and the finish super crispy and delicious.

You only need a few ingredients to recreate this recipe that will take you to the heart of Andalusia. Enjoy!

How to make flamenquin

  1. Pound pork fillets between plastic wrap to ¼ inch thickness.
  2. Marinate pork with garlic, parsley and salt in the refrigerator for 1-2 hours.
  3. Lay pork flat, top with prosciutto and place manchego cheese along one side.
  4. Roll the pork and ham around the manchego cheese to form a roll.
  5. Dredge in flour, beaten egg and bread crumbs.
  6. Heat ¼ inch of Spanish olive oil in a skillet to 350°F (177°C).
  7. Fry each flamenquin in the olive oil, open side down, until golden brown and cooked through.
  8. Drain on paper towels and serve hot with salad, chips and/or aioli.

  • 4 5-ounce pork fillets
  • 2 cloves garlic minced
  • 1.5 tablespoons dried parsley
  • 1 pinch salt
  • ¼ pound serrano ham
  • ¼ pound manchego cheese sliced into ½-inch sticks

For Breading & Frying

  • Olive oil from Spain
  • Flour
  • 2 eggs beaten
  • 4 ounces breadcrumbs
