Chimichurri sauce recipe

Today you will learn how to make chimichurri. The original chimichurri sauce recipe comes from Argentina and Uruguay. Nowadays, it is used worldwide because of its amazing flavor, a top dressing especially for roasted meats and fish: beef steak, grilled fish, chicken, vegetables… Chimichurri combines perfectly with almost any food!

You can use chimichurri sauce for seasoning the food before cooking or after cooking as a gravy or dipping sauce. It will provide great taste, even more when making it with olive oil from Spain, the leading producer. Besides the flavor, there are many other reasons to use Spanish olive oil, because it is a source of health and well being, with its antioxidants, vitamins and oleic acids.

A good chimichurri sauce recipe has olive oil from Spain as its main ingredient, so let’s get to it!

How to make chimichurri sauce:

  1. Rinse the fresh parsley and then chop it as finely as you can. Put it in a bowl.
  2. Also chop in very small pieces the rest of the solid ingredients: the garlic cloves, the red pepper and the chili pepper (this last ingredient is not mandatory, only if you want the sauce to be spicy). Add them to the bowl.
  3. Grate the peel of a lemon in the bowl. Be careful because you only need the surface of the peel, the yellow part. The white skin may make the sauce taste bitter.
  4. Take a pinch of each of this ingredients: bay laurel, basil, rosemary, thyme. Chop them as finely as you can and add them to the bowl. Then add cumin powder, oregano, salt and pepper.
  5. Lastly, add the ½ cup of Spanish EVOO and mix everything with a teaspoon.

The chimichurri sauce is ready! If you have time, let it rest for at least half an hour at room temperature. It is not essential to do this, but letting it rest will help boost the flavors even more.
