Marinated artichoke hearts

Originating from the Mediterranean region, the artichoke has been prized for its unique flavor and versatility in cooking since ancient times.

Over the centuries, the artichoke spread throughout Europe and eventually made its way to America through European explorers and colonizers. However, its popularity in the United States didn't peak until the late 19th and early 20th centuries when Mediterranean immigrants introduced the artichoke to American cuisine.

How to make marinated artichoke hearts step by step: 

  1. Open the can of artichoke hearts and drain well. Place them in a large bowl and set aside.
  2. In a small skillet, heat 3 tablespoons of Spanish olive oil over medium heat. Add the 2 minced garlic cloves and sauté until golden.
  3. Remove the skillet from the heat and add 1 teaspoon of lemon zest to the hot oil. Stir well to combine the ingredients.
  4. Pour the olive oil and lemon mixture over the artichoke hearts in the bowl. Add 1 tablespoon of chopped parsley and season with a teaspoon of salt (optional).
  5. Gently toss the artichoke hearts to ensure they are well coated with the marinade.
  6. Cover the bowl with plastic wrap and let marinate in the refrigerator for at least 1 hour.
  7. Once marinated, remove the artichoke hearts from the refrigerator and let them come to room temperature for a few minutes before serving.
  8. Serve the marinated artichoke hearts.
