How to make blueberry tart:

  1. Preheat the oven to 350° F.
  2. In a bowl, combine the sugar, flour and Extra Virgin Olive Oil from Spain and mix until a sandy, crumbly texture is achieved. Reserve ¾ cup of the mixture for the topping.
  3. Grease a 10-inch dish with Extra Virgin Olive Oil from Spain. Press the crumbly crust mixture uniformly into the bottom of the pan and bake for 10 minutes.
  4. In a bowl, combine the eggs, sour cream, flour, and salt and mix well. Add the blueberries. You can do this with a whisk or with your hands. Kids love this step!
  5. Pour this mixture evenly over the baked crust and sprinkle with the reserved topping.
  6. Bake for 50 to 60 minutes. The topping should be slightly golden. Serve warm.

  • ¾ cup sugar

For the filling:

  • 2 large eggs
  • 1 cup sugar
  • ½ cup sour cream
  • ½ cup flour
  • Pinch of salt
  • 3 cups fresh blueberries
