Pomegranate, spinach and walnut salad

The pomegranate is a fruit with a fantastic flavor and antioxidant properties that make it be catalogued as a superfood, a term we hear very often nowadays. Pomegranate season starts at the end of the summer, so in this recipe we’ll show you how to prepare a refreshing pomegranate salad with spinach and walnuts.

Open the pomegranate and take the seeds out

Dressing preparation:

  1. Chop the garlic clove in very small pieces.
  2. In a small bowl, mix one teaspoon of mustard, one teaspoon of wine vinegar, the chopped garlic, salt and pepper. Be careful not to add too much mustard, it has a very strong taste and its taste could cover that of all the other ingredients. It’s better to add a little at first, try the dressing, and then add a little more if you consider it necessary.
  3. While mixing the ingredients, gently add two full tablespoons of EVOO from Spain.
  4. If posible, let the dressing sit for a few minutes before adding it to the salad.

How to prepare the pomegranate salad:

  1. Cut the pomegranates in half and take out the seeds using a spoon, then put them in a large bowl.
  2. Add the spinach leaves and the sugar-coated walnuts.
  3. Pour the dressing over the salad and mix everything with salad tongs.

Salad ready. This pomegranate salad recipe is delicious and very quick to prepare, the only task that can take you a little more time is opening the pomegranate and taking out the seeds. The sugar-coated walnuts give an interesting taste to the salad, but if you prefer, you can also use raw nuts instead. Enjoy!
