  1. In a large pitcher, mix 2 cups of strong coffee and 1/4 cup of sugar, stirring well until the sugar is completely dissolved.
  2. Add 2 tablespoons of Spanish extra virgin olive oil and 1/2 teaspoon of vanilla extract to the coffee and sugar mixture. If desired, you can also add the lemon zest for an additional flavor boost.
  3. Pour the mixture into a shallow baking tray and place it in the freezer.
  4. After about an hour, remove the tray from the freezer and use a fork to scrape and break up the ice crystals that have formed around the edges. Return the tray to the freezer.
  5. Repeat this process every 30 minutes for about 3 hours, scraping and breaking up the ice crystals to achieve a granular texture.
  6. Once the granita is completely frozen and has a granular consistency, it is ready to be served.
  7. Serve the coffee granita in individual glasses and garnish with a lemon slice if desired.
